Daniel  Rothman


Chef Dan Rothman is now the GM of Food and Beverage at Shawnee Inn & Golf Resort's Gem and Keystone. Previous experience as a Team Leader at Whole Foods and a Private Chef for Quality Thyme Catering has made him the right guy at the right time for the green transformation that has been going on at Shawnee-on-the-Delaware recently.


Dan Rothman has worked for 25 years in the Food & Beverage industry with highlights including Tavern on the Green in NYC, and critically acclaimed The Frog & the Peach and Stage Left in New Brunswick NJ.


Graduate of Johnson & Wales Culinary Arts Program in Providence RI class of '86


Motivation / Inspiration for doing what you do: I love to create dishes that stimulate the senses and make people happy.


Accomplishments/ achievements/ records set of interest: As the opening chef at Stage Left I received an "excellent" review from the NY Times and Four Stars from the Star Ledger.

In New Orleans I received Four Beans (red beans not stars in NOLA) from the Times Picayune.


While not a record of interest, clearly the work that I have enjoyed the most over the years was being a vendor at the Monroe County Farmers Market, preparing great products with local ingredients and being in the outdoor venue to chat with the appreciative patrons.


First and/or transformative food memory: I have had many moments that have been transformative with food but the earliest one with deepest impact would be when I was a small boy in my Mom's garden-- I picked and ate a beefsteak tomato that I had helped to plant and take care of from a seed. Today I still get over run with joy smelling tomatoes in my garden thinking of the yumminess to come.
