Soon out of the Culinary Institute of America, Chef Jim Evans accepted the position of Executive Chef for Governor Robert Casey at the Governor's Mansion in Harrisburg, PA. For 10 years, he served the Commonwealth through the Tom Ridge administration. It was an incredible and rewarding experience, a journey that made Jim realize that there is nothing like being the Chef for the Governor, the first family, officials, dignitaries and celebrities. Today, Jim exercises his creativity to deliver high quality appetizers, soups and entrees from scratch- utilizing the freshest ingredients available. He uses local vendors for produce, meats, fish and components. Nightly features celebrate his unique inspiration and are always delivered in a delectable presentation, ensuring a fine dining experience for all patrons.
